How to Vacuum Seal Mason Jars: A Step-by-Step Guide

Learn how to vacuum seal mason jars for dry goods, nuts, coffee, and leftovers using a handheld sealer and jar attachment.

Mason jars are the workhorses of the pantry. They are cheap, reusable, oven-safe, and endlessly useful. But one thing most people do not realize is that you can vacuum seal mason jars โ€” turning them from simple glass containers into airtight, long-term storage vessels that keep food fresh for months.

If you already own a handheld vacuum sealer, you are one cheap accessory away from sealing jars. It is one of the most useful tricks in the whole vacuum-sealing playbook.


Why Vacuum Seal a Mason Jar?

The ring and lid that come with a mason jar do a decent job, but they do not create a vacuum. When you vacuum seal a jar:

  • Dry goods stay fresh longer. Flour, sugar, rice, pasta, nuts, coffee beans, dried herbs, and spices stay aromatic and pest-free for months.
  • No freezer burn. Berries, chopped veggies, and leftovers frozen in sealed jars do not develop that frosty, off-tasting surface layer.

What You Need

You do not need a special countertop sealer. Here is the kit:

Step by Step: How to Vacuum Seal a Mason Jar

Step 1: Prep the jar and food

Start with a clean, completely dry jar. Moisture is the enemy of shelf-stable dry goods. Fill the jar, leaving at least ยฝ inch of headroom at the top โ€” more if you are sealing liquids (1 inch minimum) to allow for expansion during freezing.

For dry goods (flour, rice, nuts, coffee), you can fill close to the shoulder of the jar. For wet foods or marinating, leave more room. For freezing, leave extra room for expansion โ€” liquids expand as they freeze and can crack jars.

Step 2: Apply the flat lid

Place a clean, flat mason jar lid on top of the jar. You do not need the screw-on ring yet for the vacuum process (though some people like to put it on loosely โ€” either way works).

Step 3: Attach the jar sealer

Place the jar sealer attachment firmly over the top of the jar. It should seal completely around the rim. Most attachments work for both regular and wide-mouth jars with a simple flip or adapter swap.

Step 4: Connect your handheld sealer

Step 6: Detach and secure

If it pops off easily, wipe the rim, reposition the lid, and try again. Add the screw-on ring for extra security (especially for pantry storage).

Step 7: Label

Write the date and contents on the lid or a piece of tape. Sealed jars of dry goods can last 6โ€“12 months in a cool pantry. Frozen sealed jars keep well for 3โ€“6 months.

Foods That Work Great in Sealed Jars

  • Coffee beans and ground coffee
  • Nuts and trail mix
  • Dried fruit
  • Spices and dried herbs
  • Flour, sugar, grains, dried beans
  • Freeze-dried meals and backpacking food
  • Leftover soups, stews, and sauces (freeze these)
  • Marinating meats and vegetables (refrigerate, consume within days)

Foods to Avoid

  • Soft baked goods like bread or muffins โ€” the vacuum crushes them.
  • Moist or greasy foods for room-temp storage โ€” vacuum sealing does not replace canning. Low-acid foods (vegetables, meats, soups) must be processed in a pressure canner or kept in the fridge/freezer.
  • Cruciferous veggies raw (broccoli, cabbage, kale) โ€” they emit gases that can break the seal over time. Blanch before sealing, or expect shorter life.

Opening a Sealed Jar

To break the seal, slide the tip of a spoon or a jar opener under the edge of the flat lid until you hear a "hiss" of air rushing in. The lid will lift easily. Do not pry with a knife โ€” slipping blades cause injuries.


Final Tips

  • Always check jar rims for chips or cracks before sealing. Damaged rims do not seal.
  • New lids seal more reliably than used ones. Reuse rings, replace flat lids regularly.
  • For marinating, 30โ€“60 minutes under vacuum is worth 4+ hours in the fridge. Pull a quick seal on a jar of meat and marinade before dinner, and by the time the grill is hot, the flavor has penetrated deep.
  • When freezing, leave that extra headroom. Seriously. Cracked jars are sad.
